Rustic Italian Bread

I am making Italian bread, which is a more involved process than expected. I shall report back on the results, but here's the basic outline so far:
KING ARTHUR BREAD FLOUR
Begin the sponge the night before.
Add remainder of ingredients and knead for 15-25 min
1 hr rise, fold over
1/2 rise, fold over
1/2 hr rise
Knead and reshape
1 1/2 hr rise
bake, starting at high heat, then reducing temp

I am psyched. Baking is magic :)
